White Cloud Fungus

White Cloud fungus, Silver Ear fungus
(Tremella fuciformis) The white cloud fungus is ivory-white and closely related to the wood ear. Chinese chefs often use it in sweet dessert soups as it is thought to enhance the memory. The dried mushroom, which will keep indefinitely, is soaked in water for about an hour, then the hard yellowish core is removed before being chopped into bite-sized pieces.
