- Mouth
- salivary a-amylase: cooked starch (dextrins, maltose, and maltriose)
- Stomach
- gastric lipase: emulsified fat (fatty acids and glycerol)
- Pepsin: proteins and polypeptides (polypeptides and amino acids)
- Rennin: casein of milk (calcium caseinate)
- Pancreas
- carboxypeptidase A: proteins and polypeptides (aromatic or branch chain amino acids)
- carboxypeptidase B: proteins and polypeptides (basic side chain amino acids)
- chymotrypsin: protein and polypeptides (polypeptides, proteoses, and peptones)
- deoxyribonuclease: DNA (mononucleotides)
- elastase: elastin and other protein (neutral aliphatic amino acids)
- cholesterol esterase: cholesterol esters (cholesterol and fatty acids)
